Карп, фаршированный белыми грибами
Карп 1шт (0,9кг);
Вино белое 1 стак.;
Грибы белые 0,2кг;
Масло 0,15кг;
Яблоко свежее;
Соль и зелень.
С рыбы счистить чешую, выпотрошить, вырезать жабры, обрезать плавники, а тушку посолить, натерев ее дополнительно и изнутри. Очищенные и промытые грибы мелко нарезать соломкой, уложить в глубокую емкость, влить вино и растопленное масло, посолить и приправить перцем. После закипания емкость накрыть крышкой и убавить огонь до слабого. Когда грибы приготовятся, соус отделить, а в них добавить тертое яблоко, перемешать и полученной массой набить брюшко карпа. В глубокий противень с растопленным маслом уложить рыбу и запекать минут 40, поливая ее периодически оставшимся от тушения грибов соусом.
Готового карпа выложить на тарелку, украсив его при помощи веточек зелени и лимонных долек. На гарнир подать овощи в отварном виде.
Карп, припущенный в отваре щавеля
Карп (филе) 0,5кг;
Лук 1шт.;
Щавель 0,5кг;
Лист лавра 3шт.;
Перец и соль.
Порубленные щавелевые листики залить водой, посолить, приправить перцем и лавровым листом, добавить луковицу, предварительно разрезав ее пополам и покипятить минут 10. Затем в этом отваре припустить разрезанного на кусочки карпа. Готовую рыбу уложить на блюдо, сверху поместить листики щавеля, укроп и эстрагон, а рядом положить очищенный картофель, который предварительно был отварен в кожуре, и свежие овощи.
Шашлык из карпа по-рыбацки
Карп 0,5кг;
Масло слив. 0,1кг;
Чеснок 5 зубчиков;
Лук 1шт.;
Уксус 3%;
Листики лавра 4шт.;
Соль, перец.
Карпа следует разделать, вынуть кости, порезать и подержать с полчасика в маринаде, который готовится из небольшого количества воды с добавлением уксуса, соли, измельченных лука и чеснока, приправленного перцем и листиками лавра. На шампуры накалывают кусочки филе, чередуя их с луковыми колечками. Над хорошо прогретыми углями карпа жарить до румяной корочки. Готовую рыбу подавать с гарниром из свежих овощей, используя в качестве приправы хрен или кетчуп.
